Recipe * Dinner * I got my inspo from the "Crispy peanut tofu & cauliflower rice stir fry" but I adapted it a lot as the recipe was quite time consuming! I pressed the tofu (I used organic cauldron tofu) briefly with a clean tea towel and cut up and put on a baking tray lined with baking paper and sprinkle over some cornflour (not essential but makes it crispy!) Then I used the measurements on the website for the sauce (using sriracha instead of chilli garlic sauce and crunchy peanut butter ) and added half of it on top of the tofu and baked straight away! Then I stir fried my veggies in coconut oil- pepper, mushroom, broccoli, bean sprouts, garlic and spring onion but you can use whatever you like! And once they were about half way cooked I added the rest of the sauce! I cheated by using pre- made cauliflower rice (tbh I was hesitant about having it because it doesn't smell that nice but tbh hardly tastes of anything and bulks up the meal!) Then chuck everything together and serve *
