APPLE & BLUEBERRY CRUMBLE Apple crumble is one of my favourite desserts, always has been and if I'm honest it's the crumble that I like the best! Frankly you could just serve me a bowl of the crumble and I'd be happy but for balance I always add a little apple in my bowl.... sometimes INGREDIENTS 4-5 apples, cored and sliced or diced Water 1-2 tsp cinnamon 1 cup blueberries, frozen or fresh 4 tbs buttery 1/2 cup self-raising flour 3-4 tbs brown sugar 1/2 cups rolled oats 4 tbs desiccated coconut . . Preheat your oven, no need to line or grease a pan unless you prefer too - I don't bother . . Add your apples to a saucepan, add around 1/4 cup water and cook until apples have began to soften. Check on water levels you still want a little water at the bottom, so add an extra tablespoon or so if needed. Once cooked, stir through cinnamon and add them to your baking dish . . Meanwhile add butter and flour to a bowl and using your fingers, combine until it forms a crumb. Then add the sugar, oats and coconut and stir until combined . . Grab your baking dish filled with your apples, top with the blueberries and then the crumble mixture and pop into the oven for 25-30 minutes until the top is nice and golden . . Serve with cream, custard or a nice caramel sauce. We served ours with chilled coconut cream - which I could have whipped but too lazy enjoy xx
