I just had to make these peanut butter cups again This time.... with caramelized banana! I can't decide which I love more, these or the strawberry ones I made last week... Maybe I'll combine the two next time . Have you ever made your own peanut butter cups? They are so easy and a lot quicker than you might think. Melt about a cup of your favorite chocolate with 2 Tablespoons coconut oil, and using just half of this mixture, pour a bit into the bottom of your cupcake papers. Pop in the freezer for just 5 minutes. Then add your nut butter layer. I used organic creamy peanut butter. Then add your fruit of choice (I caramelized banana slices for mine) and then add the remaining melted chocolate on top. I sprinkled mine with coconut flakes. Then pop back in the freezer for 5-10 minutes. After that I keep them in the fridge. But trust me, they won't last long Let me know what variety you come up with!
