Made these super delicious melt in my mouth vegetarian version of galouti kebabs yesterday! Galouti kebab is usually made with minced mutton but I wanted to make peace with my kebab this time and enjoy the Nawabi flavours. I think it's great as a snack or even for those who want to have it as a low carb dinner can bake it in the oven for about 20-25 mins at 180 deg or until it's crisp and golden on the outside. Serve these with mint chutney but I just ate it because the flavour were sooo good to need anything more drool ... so creamy and yummy recipe as below. . . . Ingredients: 1/2 onion finely chopped 1/2 green chilli 1 inch ginger finely chopped 2 big pods of garlic finely chopped 6-7 cashews A few mint leaves 1 and 1/2 cup boiled any beans ( I used butter beans you can use rajma as well) 1 tbsp lime juice 1/4 tsp nutmeg 1/4 tsp cinnamon powder 1 tsp Corriander powder 1/2 tsp red chilli powder 2 tbsp besan Oil to fry Salt to taste . . . Method: In a pan add oil, sautee onions, green chillies, ginger, garlic until onions are soft and cooked. Next add in the cashews and saute for a few mins. Next add in the besan or chickpea flour and roast for a few mins and then add the boiled beans and mix it in. Add the masala powders mentioned all of them, mint leaves and mix them all together, drizzle lime juice and blend it to a slightly smooth texture. Add 1 - tsp water to help blend. Remember not to add too much water because the kebabs won't retain shape if there is too much water in it. Next heat oil in a pan again to shallow fry the kebabs. Rub oil in the palms of your hands, take a spoon full of ground kebab mixture and make an all out of it. Gently press it to shape them into flat round kebabs and fry them in medium heat on both sides until they are crispy and golden. Serve it hot with your favourite chutney or just ketchup! . . .
