We had taco night with all the amazing fixings and one of my favorite easy, quick to make sides are these pickled radishes & cucumbers! All the easy details below . These are one of my kiddos favorites as well as mine . They satisfy that need for something salty, crunchy and they are just so so delicious! Put them over salads and/or as a condiment for tacos, quesadillas, burritos, Mexican rice bowls. They are also fantastic in any kind of sandwich or make a great side to any really (such as fish, steak, chicken) as well as a great healthy snack! 1 bunch of radishes, greens removed and sliced thinly 1 cucumber, peeled and sliced 3 tbs fresh cilantro, minced 1 cup apple cider vinegar 2 tbs real maple syrup Juice of one lime 1 tsp sea salt Freshly ground black pepper Take a medium bowl and add radishes, cucumber and cilantro. Then add vinegar, maple syrup, lime juice, salt and pepper. Let marinate for 30 minutes. Serve immediately or store in an airtight container in the fridge. These will last the whole week and the more they marinate the better they get! Enjoy! ️
